Not sure what to do with your Christmas leftovers? why not turn them into a comforting turkey soup, the perfect post-Christmas pick-me-up!
Ingredients
2 tsp olive oil, 100g smoked bacon lardons, 1 red onion, 1 carrot, 1 celery stick, 2 garlic cloves, 2 bay leaves, 2 thyme sprigs, 300g celeriac, 200g potato, 400g can red beans, 1½ l chicken or turkey stock, 350 cooked turkey, 75g kale.
Method
- Heat 1 tsp of oil in a large saucepan. Add the bacon and fry over a medium heat for 4-5 minutes until golden.
- Chop your vegetables and put the remaining oil, onion, celery, carrots in the pan and season with salt. Cook on a low heat for 8-10 minutes stirring occasionally until the veg has softened. Add the garlic and herbs, cook for an additional 2 mins.
- Add in the celeriac, potato, beans and stock, bring to the boil. Simmer uncovered for 10-15 mins. Add the cooked turkey and bacon cook for an additional 10 minutes.
- Add in the kale just before serving and return to heat for 2 mins until kale and wilted.
- Serve and enjoy!
