Packed full of veg and beautifully seasoned, you’ll feel a spring in your step after eating this healthy dish.
- 1 courgette (sliced)
- 150g asparagus (ends chopped off)
- 2 red onions (sliced)
- Handful of basil (loosely chopped)
- 1 loaf of ciabatta (loosely broken up)
- 2 red peppers (sliced)
- 500g vine-ripened cherry tomatoes
- 1 jar olives
- Handful of thyme (loosely chopped)
- 1 lemon
- 4 cloves garlic (thinly sliced)
- 2 tsp chilli flakes
- 100g artichoke hearts (halved)
- Salt
- Pepper
- Olive oil
- Preheat your oven to 180°C.
- Place the asparagus, peppers, onion, courgettes and artichokes on to a baking tray and spread evenly. Add the olives, garlic and tomatoes to the party. Throw in the ciabatta before seasoning with the salt, pepper, chilli flakes and olive oil.
- Cook for 30 minutes.
- Whilst that is in the oven make the dressing. Add the basil and thyme to a small jar. Throw in the juice of a lemon and around 30ml of olive oil. Add salt and pepper to taste before screwing the lid on the jar and shaking to mix.
- Once the 30 minutes is up, take the tray bake out of the oven and give it a stir before placing it back in for another 20 minutes.
- Once cooked, take it out the oven and drizzle dressing on top. Give it a good mix and enjoy.
