Ingredients
¼ courgette (cut into matchsticks) 100g sweetcorn, 2 eggs, 2 tbsp plain flour, 20g feta crumbled, a handful of rocket, 1 tsp olive oil.
Method
- Combine the courgette, sweetcorn, 1 egg, flour and Feta in a bowl, season with plenty of pepper.
- Split into 3 and form into patties. Pan fry in the olive oil over medium heat for 5 minutes on each side until golden.
- Bring a pan of water to boil and poach an egg by cracking an egg into a mug and slowly tipping it out into the water. After a few minutes remove with a spoon and allow to drain.
- Stack your fritters on a plate with the rocket and top with your poached egg and a generous sprinkling of black pepper.
- Serve and enjoy!
