Redcurrants

This charming little member of the gooseberry family has a shiny red gloss and its taste is equally striking, with a level of tartness which defies its size.

Reduce the redcurrants in a pan with butter, sugar and red wine vinegar for a sharp joue to serve with lamb.

Keep in the fridge if for immediate use. Or freeze by unstemming currants and putting in freezer bags.
