A very versatile vegetable, it is always handy to have one in the fridge for last-minute meals. Equally good roasted or fried until soft and tender.

Origin – Spain/Dutch

Chop into small chunks and drop into a chilli or pasta sauce. They absorb flavour very well.

Keep them at their fresh best by storing in the fridge in a brown bag.
