Apricots

Apricots have a vibrant skin which appears similar to that of a peach. Cut open and remove the stone to leave a tender golden centre.

Give your Moroccan lamb a fresh taste of the Middle East by putting some chopped apricots into the tagine.

Ripen apricots in a paper bag at room temperature. Once ripe, do not stack on top of each other to avoid unnecessary bruising.
