Bake your winter vegetables to perfection with this recipe. Try it at your next Sunday lunch or with your Christmas dinner.
1 Butternut squash cubed, 1 sweet potato peeled & cubed, 3 Maris Piper potatoes cubed, 1 onion quartered, 500g carrots, 500g parsnips, 1 tablespoon of chopped thyme, 2 tablespoons chopped fresh rosemary, 2 garlic cloves, peeled and crushed, 4 tablespoons of olive oil, salt & pepper to season.
- Pre-heat your oven to 220c/425F/Gas 7
- Place all of your chopped vegetables into a large bowl, add the herbs, garlic, olive oil and use your hands to mix.
- Spread them out onto a large baking tray and cook in the preheated oven for 30-40 minutes until tender and begin turning golden brown
- Serve with your favourite dish and enjoy!
