green bean feta and almond salad

Get your tastebuds going with the delicious and diverse dish.

  • 150g cup sliced almonds
  • 500ghttps://www.kerrysfresh.co.uk/product/bobby-beans/ green beans, trimmed and cut into long pieces
  • 60ml cup water
  • Half a tsp of salt
  • 2 tablespoons extra-virgin olive oil
  • Juice of half a lemon
  • 2 tsp Dijon mustard
  • 1 medium clove garlic
  • Freshly ground black pepper
  • Pinch of red pepper flakes
  • 100g cup crumbled feta cheese
  • 4 large basil leaves
  • Remaining lemon juice (for garnish)
  • Zest of one lemon
  1. Heat a large pan on a medium heat. Toast the almonds, stirring continuously (they burn very easily). Reduce the heat after 3 minutes and continue stirring until they are golden brown. Transfer them to a bowl or plate afterwards.
  2. Add the green beans to the pan along with the water and a pinch of salt. Cover the pan and cook until the beans are tender (stirring occasionally). Remove the lid and cook until the water has evaporated.
  3. Whisk together the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes and a pinch of salt to make a fresh sauce. Leave it to one side, for now.
  4. Once the beans are cooked pour the mixture into the skillet. Add the almonds back to the pan and add about half the feta. Mix everything together nicely and taste for seasoning.
  5. Place the bean dish onto a platter or serving bowl and garnish with the torn basil leaves and feta cheese. Grate some lemon zest on top for a bit of zing and enjoy.
