Although beetroots are more commonly associated with winter, the climate at this time of the year means that we can still make the most of the last remaining winter veg. This recipe is the perfect hybrid to use up the remaining autumn and winter produce.
- Throw the celery, apple, beets, and spinach into a blender, blend until smooth.
- Strain the juice into a large cup or jug to remove the bits and pulp. Use a spoon to help stir the pulp and press out the liquid.
- Place the juice in the fridge and allow to chill for at least 30 minutes (It should last for up to 3 days).
