You may know this exotic fruit of Middle-Eastern origin as a persimmon. Not that common in British kitchens…yet. It should be because of its versatile nature. When ripe, it is best used as a fresh salad ingredient, but it can also be utilised in sauces or purees.

Wait until ripe, slice the top off and eat like a yogurt. Simple but delicious natural flavours.
Store in a cool, dark place until ripe for best taste - softness indicates ripeness.
